You may not have heard of Berkshire pork until now but it’s on the menu of many fancy restaurants across the United States. It is also referred to as Kurobuta – meaning black pig in Japanese (Berkshire pork is very popular in Japan).
Berkshire pork is a heritage breed of pig, which was discovered over 300 years ago in Berkshire County in the United Kingdom. Berkshire pork is renowned for its richness, texture, marbling, juiciness, tenderness and overall depth of flavor. It is said to have a very specific taste, not generic and bland or mild like regular pork. Berkshire pork is prized for juiciness, flavor and tenderness, is pink-hued and heavily marbled.
Berkshire pork looks and tastes like no other pork. Unlike commerical pork it is visibly different. It has a darker richer color with an abundance of intramuscular marbling. Its flavor is distinctive with an unparalleled juiciest and tenderness for pork.
We pasture raise Cornish-Rock Meat Chickens. These white hybrid chickens are double-breasted, grow much quicker, are larger, and taste amazing. These chickens are the same breed used by commerical growers because they are very efficient in growth and have been cross bred for the white meat American consumers prefer. This is the same reason we raise them. The difference is what we feed them and how they live. Our chickens roam the pastures and are eager and happy chickens to run around. They don't just sit there. All of our broilers are “modified” free-range on pasture. Modified meaning they have a large electric netting fence surrounding them which is inside of a larger high-tensile electric fence for predator protection. We have may predators and we try to minimize our losses this way. The broilers are raised naturally, grazing and foraging in the pasture, and are supplemented with locally-milled feed.
Our eggs are collected daily from our free range chickens. We have 75+ chickens of various breeds. Buff Orpingtons (light brown eggs), Issa Browns (dark brown eggs), Reds (brown eggs), and White Leghorns (white eggs). Pasture raised with our pigs and all of their eggs are 100% delicious. Although we don't integrate laying hens with our Cornish Rocks, our laying hens are also modified free range due to predators. Modified meaning they have a large electric netting fence surrounding them inside a high tensile fence. Their diet consists primarily of foraging pasture but we do supplement them with locally-milled feed.
If you are looking for high quality meat, we offer whole or half pigs. Let us know what you want and when you want it. This is not a whole or half carcass. They are cuts of meat equivalent to whole or half pigs. We also offer a variety of retail cuts of meat if your freezer cant handle the quantities.
If you are looking for chicken that has a taste, then look no further. We offer whole chickens with or without hearts and gizzards. Each chicken is 4-5 pounds dressed weight, perfect for a family or 4 or 5.
